 Laura's Recipes
  • 2 pounds boneless skinless chicken breast, cut into thin strips
  • 1 large sweet red pepper, cut into strips,1 large green pepper, cut into strips
  • 4 oz. fresh mushrooms, sliced
  • 1/2 cup canned bamboo shoots
  • 1/2 cup fat-free chicken broth
  • 3 tbsp. low-sodium soy sauce
  • 3 tbsp. hoisin sauce
  • 2 tbsp. garlic chili paste
  • 3 cloves garlic, minced
  • 1 tbsp. ginger, grated


1. Spray frying pan with no-stick cooking spray.

2. Over medium-high heat stir-fry chicken strips until cooked. Add peppers, mushrooms and bamboo shoots.

  3. In another bowl combine broth, soy sauce, hoisin, chili paste, garlic and ginger and quickly add to chicken and vegetable mixture. Cook another 2 minutes and enjoy!
Laura's Story


It all started about 25 years ago.  When Laura - creator of The Magic Muffin Diet™ gained a couple of extra pounds, she would start baking low calorie healthy muffins full of fibre and natural ingredients for herself.

She would eat them throughout the day so as to curb her appetite, until she dropped the desired amount of weight. Friends and family would notice her regimen and  started asking Laura to bake them a batch of her muffins so they could start losing weight as well – and they did!

Years later after having had 4 children, Laura had gained a substantial amount of weight. She decided to start baking her healthy muffins once again and successfully lost all her extra weight in almost no time.

It was during a routine medical appointment, that her doctor noticed her weight loss and asked how she managed to lose the weight, Laura told her about the healthy muffins. Her doctor asked her if she could try it as well. After a couple of weeks eating Laura’s healthy muffins, she dropped a significant amount of weight and started telling her patients about the muffins.

The demand for Laura’s muffins started to grow quickly. She was baking the muffins from her home kitchen almost 10 hours per day. All this, just by word of mouth. Customers for her muffins kept on growing and her client base grew to the point that she was baking over 3,000 muffins per week from her home kitchen. So Laura had no choice but to expand her operations and bake her muffins from an industrial bakery plant.



And that’s how The Magic Muffin Diet™ was born!
